Red Caviar Dip

INGREDIENTS

1 cup sour cream.
2 whole scallions, thinly sliced
1 Tablespoon fresh lemon juice.
1 Tablespoon fresh chives. chopped
1 Teaspoon fresh chives(for garnish)chopped
1/4 cup red salmon caviar,drained & rinsed
3 Tablespoons red salmon caviar (for garnish)

INSTRUCTIONS

Mix sour cream, scallions, lemon juice and 1 tbsp. chives in a medium bowl. Gently fold in 1/4 cup caviar. Tranfer to a serving bowl. Cover and refrigerate for at least 6 hours (or up 1 day).

Sprinkle dip with remaining 1 tsp. chives and 3 tbsp. caviar. Serve with toast points, good crackers or raw vegetables.

CHEF COMMENTS

This is easy to make and sounds like you spent a lot of money to get caviar! But you know better then that.
