Roasted Red Pepper Salad

SERVINGS

INGREDIENTS
1 can (1 lb.) roasted red peppers. drained, liquid reserved
4 fresh plum tomatoes, cored and chopped medium
1 md. red onion peeled and sliced
2 cloves garlic, minced
2 tsp. dried oregano
1/2 tsp. red pepper flakes
1/4 cup olive oil
2 tbsp. fresh chopped parsley
INSTRUCTIONS
Slice the roasted peppers into 1/2 inch wide strips and put in a large bowl. Add the tomatoes and onion. In a medium bowl mix 1/2 the reserved liquid and the olive oil with pepper flakes, dried oregano and minced garlic to make the dressing. Pour the dressing over the peppers and toss. Cover and chill for 1 hour to let the flavors blend. Garnish with the chopped parsley.
CHEF COMMENTS
I came up with this one many years ago when doing huge cook outs in Syracuse N.Y. A lot of people asked for this recipe. It's easy and tastes real good.
Try it on a sub sandwich instead of just tomatoes.
