Jalapenos Stuffed with Shrimp

INGREDIENTS

12 whole large jalapeno peppers.
24 medium shrimp. peeled & devained
8 ounces cream cheese, softened
8 slices uncooked bacon.

INSTRUCTIONS

Slice the jalapenos in half lengthwise and clean out seeds with a spoon. Fill each half with a little cream cheese. Place one shrimp on top of each pepper and a small slice of bacon on top of the shrimp.

Cook them off to the side of the grill on a baking pan for 20-30 minutes with the grill covered. Or, bake uncovered in a preheated 350°F oven. Serve while hot or warm.

CHEF COMMENTS

I make these when my wife and I go camping. So they are easy to make and not as hot as you would think. And you can do them on the grill or in the oven.

I made these just last night for family that came for Thankgiving. They thought they were out of this world. Now they want them when we watch the football games today. I can't wait to make them at work in the diner. You will hear more then I am sure. Just a great and somewhat easy recipe. November 25, 2004
