6 cups water
1/4 cup finely chopped onions

6 slices bacon, chopped
1/4 cup finely chopped green pepper
1 jalapeno, diced
1 tsp. chili powder
1/2 tsp. cumin

Salt and pepper, to taste

INSTRUCTIONS

In a saucepan, combine beans and water and cook at a gentle boil for 1-1/2 hours or until tender. Drain beans, reserving liquid. In a skillet, saute onion, pepper, garlic and bacon. CHEF COMMENTS

The Anasazi beans make this recipe much sweeter than most refried bean recipes.

Note: These refried beans may be frozen for later use.
