Oatmeal Apple Cake

INGREDIENTS

1 C flour
¾ tsp baking soda
½ tsp salt
½ tsp ground allspice
½ c oil
1 c sugar
1 egg
1 tsp vanilla
1 c rolled oats
1 c finely chopped apples
1/3 c chopped walnuts (opt)

INSTRUCTIONS

Stir together flour, soda, salt, and allspice. Combine oil, sugar, egg and vanilla; mix well. Add flour mixture and oats. Stir in apple and nuts; spread in greased and floured 8x8-inch baking pan. Bake at 350°F for 35 to 40 minutes or until cake tests done when wooden pick is inserted near center.

CHEF COMMENTS

The small pieces of apple really make a impact on the outcome. I make it at work and they complain about how good it is, and tell me to stop trying to make them fat.
