Sour Cream Coffee Cake

Servings: 2 loaves

INGREDIENTS

¾ c butter or margarine, softened
1 ½ c sugar
3 eggs
1 ½ t vanilla
3 c flour
1 ½ t baking powder
1 ½ t soda
¼ t salt
1 ½ c sour cream

INSTRUCTIONS

Grease 10x4-inch tube pan or 2 9x5x3-inch loaf pans. Combine butter, sugar, eggs and vanilla in a large mixer bowl. Beat on medium 2 minutes. Mix in flour, baking powder, soda and salt alternately with sour cream.

Spread layers of batter into pan, alternating with a layer of filling, ending with filling. Bake about 1 hour at 350°F. Cool on a wire rack.

This is my "home" cake - it's so easy and quick to make, and comes out great every time. I got the recipe from my mother, actually, with a few slight variances. My recommended variance for filling is to grate 50 grams of choclate with a fine grater, add half of this to the cake mixture and the other half in the middle of the cake (instead of the cinnamon). Also, once the cake cools, sprinkle the top with sugar powder for a finishing touch. July 19, 2004

Fantastic! (And in response to a previous reviewer... Coffee cakes aren't meant to contain coffee, the name comes from the fact that it is a good snack to serve with coffee or tea.) June 5, 2005
