Pumpkin Squares

INGREDIENTS

4 eggs
1 c oil
15 oz canned pumpkin
1 2/3 c sugar
2 c flour
2 t cinnamon
2 t baking powder
1 t baking soda
1 t salt

INSTRUCTIONS

Beat eggs thouroughly with oil. Mix in pumpkin and set aside. Combine remaining ingredients in a separate bowl. Gradually add to pumpkin mixture and mix well. Pour into ungreased jelly-roll pan. Bake at 350°F for 25-30 minutes. Cool completely before frosting with <A HREF=/recipes/recipe.phtml?recipe_id=18472>Perfect Cream Cheese Frosting</A>.

Even folks who are not so keen on Pumpkin will love this one. It is really a sheet cake. Very moist and light. Tried it out on Halloween and will make again for Thanksgiving. I added a little more cinnamon and a bit of nutmeg. Pecans would also be great. For my holiday table this recipe will take the form of a layer cake or roll - think "Bouche de Noel". Really great recipe! November 2, 2005
