Adobo

INGREDIENTS

½ C cane vinegar (plain will do)
1 head garlic crushed
1 t fresh ground blk pepper
1 bay leaf
2 T rocksalt
1 C dark soy sauce
1 t sugar
½ K chicken, serving size
½ K pork, serving size (with little fat is better)
100 gms of sliced pork liver
½ C water

INSTRUCTIONS

Combine all ingredients in a saucepan except water. Let soak for 45 minutes. Add water and mix well, simmer 1/2 hour, covered. (Don't open the lid, the acidity in vinegar will evaporate). Cook until a little oil is produced from the pork. Increase the heat for 5 more minutes. Serve with steamed rice.

CHEF COMMENTS

Can stay up to three days without refrigeration.

* regular vinegar works as well
