INGREDIENTS

1 LARGE CAN OF DICED TOMATOES
1 LARGE RED ONION(DICED)
2 MED. PICKELED JALAPINOS
2 CLOVES PICKELED GARLIC
2 TBLS OF FRESH CHOPPED CILANTRO
1 TSP GROUND OREGANO
1 TSP GROUND CUMIN
2 TBLS OLIVE OIL
2 TBLS VINEGAR

INSTRUCTIONS

Slice peppers in half; remove seeds and chop into small pieces. Roll lime to release juices and squeeze into bowl. Add all ingredients into a bowl; mix, cover and chill.

Very good salsa! I added more cilantro and used only half of the olive oil. The hubby wants to try it with white or yellow onion next time, and I want to make it with fresh tomatoes. And it's definitely good with a cold refreshing brewski! June 15, 2005
