Vegan Chocolate Fudge Cake

INGREDIENTS
2 & 1/2 cups vegan chocolate chips
4 cups ap flour
1 tablespoon baking soda
1/4 teaspoon salt
1/4 tsp cinnamon
1/4 tsp cayenne pepper
1/2 cup sugar or brown rice syrup
2 tsp oil
1&1/2 cups water or chocolate soy milk
2 egg replacers (the powdered kind) prepared according to box directions
2 tablespoons white or rice vinegar
INSTRUCTIONS
In a large bowl mix all dry ingredients. Melt chocolate chips in microwave safe bowl, stirring every minute. Combine water or soy milk, egg replacer, melted chocolate and dry ingredients; mix well. Lightly oil 1 9x13-inch cake pan or 2 8-inch round cake pans.
Add vinegar to cake batter and mix well quickly. Pour batter into pan(s) and bake in preheated 350°F oven 25-35 minutes, until toothpick inserted into center comes out clean.
Allow to cool completely before removing from pan(s). Frost if desired.
