Loaded Mashed Potatoes

Servings: 4 servings

INGREDIENTS

4 lbs potatoes
3/4 c sour cream
12 slices bacon, cooked and crumbled
2 tbsp chives
2 green onions/sliced
1 stick butter or margarine
1 c. cheddar cheese

INSTRUCTIONS

Peel, chop and cook potatoes until tender; drain. Mash in bowl. Mix sour cream, 3/4 of the bacon, chives, 1/2 of the green onions and butter. Mix with a hand mixer until mixed well. Pour into an oven safe bowl. Top with cheese, remaining bacon, and onions. Bake at 350°F for 20 minutes or until cheese is melted and bubbly.

CHEF COMMENTS

This is a great change for ordinary mashed potatoes. I hope you enjoy it as much as my family does.

This recipe is so easy. The only change we made was more butter (to help make the potatoes creamier) and add cheese to the actual potato mixture, not just on top. It came out SOOOOO good. June 1, 2008
