CHEF COMMENTS

Everyone looks for me during St Patricks day for this candy. They feel I have put tons of work into it. The most work is rewriting the recipe for everyone.

My variation:

Shred the coconut in a food processor until fine (I hate chewing coconut). Continue recipe, and even people who hate coconut will gobble this one up!

Shredding the coconut makes the balls a bit creamier. Also add a bit more vanilla, or for adults, 1T of Jameson's. March 14, 2004
