Creamy Fruit Salad

INGREDIENTS
1 can sliced peaches
1 can pineapple chunks
1 can mandarin oranges
1 can sliced pears
1 jar marachino cherries-halved
1 pint fresh strawberries-quartered
20-30 grapes-seeded and halved
1 8oz tub of cream cheese
1 8oz tub of frozen whipped topping-thawed
1 cup confectioners sugar
shredded coconut (optional)
miniature marshmallows (optional)
INSTRUCTIONS
Drain canned fruit and cherries in a collander (overnight if possible). Pat fruit as dry as possible with a paper towel. Mix all fruit together.
In a bowl, beat cream cheese and whipped topping until creamy. Add confectioners sugar and beat until mixed. Fold cream cheese mixture into fruit. Fold in coconut and marshmallows if desired. Chill.
CHEF COMMENTS
Fruit must be as dry as possible or salad will be runny.
