Crostini Giardino -- Toasted Bread and Fresh Vegetables

Servings:
INGREDIENTS
1 loaf Italian bread, sliced
1 large tomato, chopped finely
1 medium onion, chopped finely
2 tablespoons arugula, chopped fine
1 teaspoon fresh basil, chopped fine
olive oil
Salt and Pepper to taste
INSTRUCTIONS
Toast the thick sliced Italian bread in a broiler, making sure you toast both sides.
Chop all the ingredients, except the olive oil fine, and mix together well. Add a touch or so of olive oil to the mixture after draining off some of the liquid of the vegetables.
Salt and pepper to taste. Spread a tablespoon or so on each slice of toasted bread. Serve while toast is still warm and crisp.
CHEF COMMENTS
