3/4 tsp. baking powder
1/2 tsp. salt
2 tsp. groung ginger

Sift the flour, baking powder, salt, ginger, and cinnamon together and stir into the butter-sugar mixture. Wrap the dough in wax or foil and freeze in the freezer for 1/2 an hour.
Preheat the oven to 375°F.
Roll out the chilled dough until it is about 1/4-inch thick and cut it with a christmas tree shaped cookie cutter, or if you want them circular, use a glass. Place the cookies onto a lightly greased baking sheet and bake for about 12 minutes, or until they are golden.

Am searching for a "Beef Tounge cookie" receipe. They are very crisp and shaped like a tounge( thus the name.) spicy and a rich brown color. About 1/4 inch thick after baking. My mother used to make them especially at Christmas time.
