Salsa Enchiladas

INGREDIENTS

1 Big Jar Salsa
1-1/2 cups cottage cheese
2 cups cheddar cheese
green onions
1 can chopped olives
8 flour tortillas

INSTRUCTIONS

In 13x9x2-inch baking dish, pour small layer of salsa over the bottom of dish. In bowl, mix cottage cheese, 1 cup cheddar cheese, green onion, and olives. Take about 1/4 cup of mixture and place inside a tortilla. Roll up and place in dish on top of salsa. Finish all the rest the same (no need to use a toothpick to hold together, they will stay on their own). Pour the rest of the salsa over the top of enchiladas. Add remaining cheese on top of enchiladas. Bake covered at 375°F for 20-25 minutes.

CHEF COMMENTS

A different way to serve Enchiladas. Salsa instead of Enchilada Sauce. Very good and easy to make. Can be made the night before.
