Parmesan Potato Salad

INGREDIENTS

6-8 med sized potatoes, boiled, cooled, peeled and cut into bite sized chunks
1 medium onion chopped
2 Tbs light flavored oil (canola or corn)
2 Tbs sweet pickle juice (or apple cider vinegar and sugar to make sweet/sour)
1/4 to 1/2 cup Parmesan cheese (to taste)
1 to 1 1/2 cups Mayonnaise
Salt & pepper to taste
Paprika

INSTRUCTIONS

In large bowl mix together potatoes and onions. Sprinkle oil and pickle juice (or vinegar and sugar) and toss all lightly. Sprinkle parmesan in tossing lightly with each sprinkle to coat entire batch. Add salt and pepper to taste. Mix in mayonnaise and sprinkle a little paprika on top for color. Chill.

This is an old family favorite handed down several generations.
