Tomato Chutney

SERVINGS

4 to 8 servings scale / convert

INGREDIENTS

1 lg. red tomato, finely chopped
1 lg. yellow tomato, finely chopped
1 md. onion, finely chopped
1/2 cucumber, peeled, finely chopped
1 stalk celery, finely chopped
1/4 tsp. black pepper
1/2 tsp. dried basil
2 tbsp. olive oil (or other light oil)
1 tsp. lemon juice
1 dash salt
1 apple, peeled and finely chopped

INSTRUCTIONS

Chop all vegtables into small pieces. (Think of salsa sized peices) Mix all of the vegtables, together in a medium sized bowl. In a seperate bowl mix together pepper, basil, oil and lemon juice creating a dressing. Pour over tomatoes and veggies. Mix together with a wooded spoon, ensuring that the dressing coats all of the tomatoes. Add in a little bit of salt. (Not too much because it will spoil the light taste of the dish) Serve over your favorite meat or bread.

CHEF COMMENTS

This is perfect for summer barbeques. It is excellent over grilled chicken breast or on steak. I personally love it mixed in with some salad greens or on top of a bagel with cream cheese. Add a variety of other vegtables to try with this. Anything goes. Be sure not to add to much oil or it will become too heavy.

Nice colour and a light taste. Perfect for dieters who are looking for variety in their meals!

** It is very important that you don't cook this chutney!!
