Marinated Tomatoes

Servings:
INGREDIENTS
2 pints cherry tomatoes, halved
1/3 c. olive oil
1/4 c. red wine vinegar
1 t. salt, optional
1/4 t. pepper
1 garlic clove, minced
2 T. onion, finely chopped
1 T. fresh parsley, chopped or 1 t. dried
1 T. fresh basil, chopped or 1 t. dried
INSTRUCTIONS
Place tomatoes in bowl. Mix remaining ingredients, thoroughly, and pour over tomatoes. Cover and refrigerate for several hours.
CHEF COMMENTS
Very colorful recipe. Wonderful for large gatherings because it can be prepared hours ahead.
