Lemon Sponge Pie

INGREDIENTS
2½ Tablespoons Butter -- softened
1¼ Cups Milk
1¼ Cups Sugar
1 Lemon peel -- grated
4 Eggs -- separated (beat egg whites)
1/3 Cup Lemon Juice (fresh)
2½ Tablespoons Flour
1 Pie crust -- unbaked
INSTRUCTIONS
Cream butter and sugar until fluffy. Add egg yolks, flour, milk, lemon peel and lemon juice and mix together. Beat egg whites until stiff (but not dry). Carefully fold egg whites into mixture. Pour into unbaked pie shell. Bake for 15 minutes at 375°F/190°C. Lower oven to 300°F/150°C and bake for additional 45 minutes.
