INGREDIENTS

Ingredients~~
2 cups self-raising flour
2 cups desiccated coconut (shredded)
250g/ 80zs butter -- melted
1½ cups sugar
1 cup milk

INSTRUCTIONS

Heat oven to 180°C/350°F. Grease and line a 23 cm. (9-inch) cake tin. Melt butter in a large saucepan. Stir in the sugar and allow to cool slightly. Add all the other ingredients. Stir to mix. Pour into prepared cake tin. Bake in pre-heated oven for about 40 minutes.

At first I was reluctant to make it but it turned out to be delicious! It's texture is a bit crumbly but it is very moist and tasty!It is actually quick to make and no mess in the kitchen!! I put it in a bundt pan. April 29, 2007

I would like to add that I baked it in a convection oven at 160C(325F) so it was ready in 60 minutes. May 1, 2007
