INGREDIENTS
8 roma tomatoes, finely chopped
one bunch of scallions, chopped
2 jalapenos, minced
6-8 cloves of garlic, minced
one bunch of cilantro, finely chopped
5 t olive oil
5 t red wine vinegar
salt to taste
INSTRUCTIONS
Combine all ingredients in a bowl and mash them with your hands until they are evenly distributed. You can even store this in the fridge over night so that the flavors can mix together.
CHEF COMMENTS
This is a great fresh salsa that can be served with chips, beans, or any mexican meal.
