Homestyle Rice Pudding

INGREDIENTS

3 Cups water
1 Tbsp. butter
1 1-2 Cups long grain rice
8 Cups whole milk
1 can evaporated milk
1 Cup sugar
3 large eggs, well beaten
3 tsp. vanilla

INSTRUCTIONS

Bring water to a boil with butter. Add rice, stir well, cover and cook on low heat for 20 minutes or until all water is absorbed. Add 5 cups of milk, reduce heat to low and bring to a simmer and stir for 20 minutes. Add 2 cups of milk, bring to a simmer and stir for additional 20 minutes. Add evaporated milk, bring to a simmer and stir for additional 20 minutes. Add remaining cup of milk, bring to a simmer and stir for another 20 minutes. Stir in sugar, stirring frequently for 10 minutes. Combine eggs and vanilla, add 2 to 3 cups of hot rice mixture, stirring vigorously so eggs are well incorporated. Add back to pot, stir well and cook for additional 3 minutes. Sprinkle with cinnamon and chill.

CHEF COMMENTS

This recipe requires that you stay close to the kitchen, but the time spent is well worth it!
