INGREDIENTS
2 sticks unsalted butter, room temperature
1 1/2 cups sugar
2 eggs
2 tablespoons unsweetened cocoa powder
2 teaspoons vanilla
1/4 teaspoon salt
1/2 cup buttermilk
1 teaspoon baking soda
2 1/2 cups flour

Beat until blended. In a small bowl combine buttermilk and baking soda, whisk until blended. Reduce mixer speed to low. Add flour alternately with 1 cup Coke, beginning and ending with flour, beating at low speed after each addition until well blended. Pour into prepared pan. Bake 30-35 minutes or until cake begins to pull away from sides of pan. Do not overbake. Cool on a wire rack.
