Seared Salmon with Roasted Pepper Mayonnaise

Servings: 4 servings

INGREDIENTS

7 ounce jar roasted red peppers, drained
1/2 cup mayonnaise
1 tablespoon fresh lemon juice
4 salmon filets, 7 ounces each
Salt and Pepper, to taste
4 tablespoons butter

INSTRUCTIONS

In a food processor puree peppers, add mayonnaise and lemon juice. Process until smooth. Chill.

Sprinkle salmon with salt and pepper. Melt butter in a large skillet over medium-high heat. Add salmon and saute until just opaque in center, about 4 minutes per side. Transfer to serving plate. Serve with a dollop of Roasted Pepper Mayonnaise as a garnish.
