Grandpa's Favorite Apple Pie

INGREDIENTS
Your favorite pastry for single crust pie
3 pound apples: half Golden Delicious,
half Granny Smith,
peeled, cored and sliced
2 cups firmly packed brown sugar
1/4 cup cornstarch
3 tablespoons dark rum or apple juice
1 teaspoon cinnamon
1 cup chopped pecans
1/2 cup rolled quick oats (not instant)
1/2 cup flour
1 stick butter, melted
INSTRUCTIONS
Heat oven to 350°F. Prepare pie pastry and fit into a 9-inch pie pan. Crimp edges and prick bottom and sides of crust with a fork. Bake 10 minutes. Remove to a wire rack.
Filling:
In a large bowl combine apples, 1 cup brown sugar, cornstarch, rum, and cinnamon. Mix well and spoon into partially baked pie shell. Combine remaining 1 cup brown sugar with the pecans, oats, flour and melted butter in a bowl and mix (mixture will be crumbly). Sprinkle evenly over apple mixture. Bake until top is golden brown and juices are bubbling, about 50 minutes. Serve warm.
