Servings: 6 servings

INGREDIENTS

1 - 9" frozen prepared pie crust
1 can coconut milk
1c sugar
1c milk
1/2c cornstarch
1c water
7oz semi-sweet chocolate
1 1/2c heavy whipping cream
1/4c sugar
Shaved chocolate, for garnish

INSTRUCTIONS

Preheat oven to 350°F. Bake pie crust until golden brown, about 15-20 minutes. In medium bowl, whisk cornstarch and water. In medium saucepan, whisk coconut milk, milk and sugar. Bring mixture to a boil, stirring often. Reduce to simmer and whisk in cornstarch mixture until thickened. Set aside. *

Microwave chocolate pieces for 1 minute or until melted. Pour half the haupia into a bowl. Mix the remaining haupia with the melted chocolate and pour on bottom of pie crust. Layer white haupia on top. Cool the pie in refrigerator for minimum of 1 hour. In a mixer, whip heavy whipping cream with 1/4 cup sugar until stiff peaks form. Garnish the pie with whipped cream and shaved chocolate. Chill for 1 hour.

CHEF COMMENTS

*This is now called Haupia. Haupia = coconut milk concoction.

I've occassionally had to make a larger version of this dessert for parties.

Just double the ingredients but you'll need to make your own crust. I use the standard shortcake-type crust that you press into a 9"X13" pan. Use Cool Whip as a substitute for the heavy cream and sugar blend.
