Hot German Potato Salad

SERVINGS

6 to 8 servings scale / convert

INGREDIENTS

6 cups hot diced potatoes
9 slices bacon, diced
1/3 cup vinegar
1 tbsp. sugar
1-1/2 tbsp. prepared mustard
1 tbsp. chopped parsley
1/2 cup finely chopped onions
3 tbsp. bacon drippings
1 tbsp. vinegar
3/4 cup boiling water
1 cup sour cream
Salt and pepper, to taste

INSTRUCTIONS

Combine potatoes and onions. Fry bacon crisp. Keep drippings; add vinegar, salt, water, mustard and sugar to drippings. Stir until sugar is dissolved. Add hot mix to potatoes and toss gently until most of moisture is absorbed. Fold in sour cream, parsley, bacon and add salt and pepper to taste. Serve warm or cold.
