INGREDIENTS

1 Grouse per person
Apples
Butter
Salt
Black pepper; freshly ground
Streaky bacon rashers

INSTRUCTIONS

Place an apple half and a knob of butter inside each bird. Season inside and out with salt and pepper and wrap well in bacon. Stand in 1/2-inch of water in a roasting pan and cover with foil. Roast in a preheated oven at 300°F for 45 minutes.

Remove the foil and pour the liquid from the pan. Unwrap the bacon. Increase the oven temperature to 450°F and roast for 10 minutes to brown the birds.
