Amish Potato Pancakes

INGREDIENTS
1 cup pancake mix
1 tsp. salt
1 cup milk
2 eggs, beaten
2 cups grated raw potatoes
1 tsp. grated onion
2 tbsp. butter, melted
INSTRUCTIONS
Mix pancake mix with salt, milk and eggs; mix. Mix in remaining ingredients. Pour 1/4 cup batter for each pancake onto hot griddle. Bake to golden brown, turning once. Serve with hot applesauce.
