Red Onion Relish

Servings: 3 cups
INGREDIENTS
1/4 c Olive oil
2 lb Large red onions; sliced and
-separated into rings
1/4 c Red-wine vinegar
2 tb Sugar
1/2 ts Salt
1/4 ts Ground white pepper
INSTRUCTIONS
In large skillet, heat oil over medium heat. Add onions and saute 6 minutes. Reduce heat to low, cover, and cook onions 15 minutes or until tender, stirring occasionally. Stir vinegar, sugar, salt, and pepper into onions. Cook 5 minutes longer or until mixed. Transfer to a serving dish and serve warm or at room temperature.
