Chewy Brownie Cookies

INGREDIENTS

2/3 cup Crisco shortening
1-1/2 cups light brown sugar, packed
1 tbsp. water
1 tsp. vanilla extract
2 eggs
1-1/2 cups all-purpose flour
1/3 cup Hershey's Cocoa
1/2 tsp. salt
1/4 tsp. baking soda
1 pkg. (12 oz.) Hershey's Semi-Sweet Chocolate Chips

INSTRUCTIONS

Heat oven to 375°F. Place length of foil on flat surface. In large bowl, beat shortening, brown sugar, water and vanilla on medium speed of electric mixer until well blended. Add eggs; beat well. Stir together flour, cocoa, salt, and baking soda. Gradually add to sugar mixture, beating on low speed just until blended. Stir in chocolate chips. Drop by rounded tablespoonfuls 2-inches apart onto ungreased cookie sheet. Bake 7-9 minutes, or until cookies are set. Cookies will appear soft and moist. Do not overbake. Cool 2 minutes; remove from cookie sheet to foil. Cool completely.

My lack of expertise may have contributed to my problems(!), but I had some trouble getting the timing right on this recipe. I ended up baking in our electric oven for almost 11 minutes, but the cookies got harder than I'd hoped. With shorter baking times the cookies fell apart when I was trying to remove them to the foil. This is my FAVORITE cookie recipe! I'd bake these cookies over any other! They are simple to make. Just let them bake for about 8 minutes and after taking them out of the oven (I use a Pampered Chef baking stone)let them sit there for a minute. They remove easily without breaking and are very soft! December 14, 2003

Very quick to prepare - Held their shape wonderfully when they came out of the oven (kept my batch in a few minutes longer, switching trays from top to bottom every 4 minutes [3 times]).
