Carnation Famous Fudge

SERVINGS

2 pounds scale / convert

INGREDIENTS

2 tbsp. butter or margarine
2/3 cups undiluted Carnation Evaporated Milk
1-1/2 cup granulated sugar
1/4 tsp. salt
2 cups miniature marshmallows
1-1/2 cup Nestle Toll House Semi-Sweet Chocolate Morsels
1 tsp. vanilla extract
1/2 cup pecans or walnuts, chopped

INSTRUCTIONS

Butter an 8-inch square pan. In medium saucepan, combine butter, evaporated milk, sugar and salt. Bring to a boil over medium heat, stirring constantly. Boil 4 to 5 minutes, stirring constantly; remove from heat. Stir in marshmallows, morsels, vanilla and nuts. Stir vigorously for 1 minute or until marshmallows melt completely. Pour into pan. Cool and cut into squares.

CHEF COMMENTS

For thicker fudge, use a 7x5-inch loaf pan.

The flavor? Wonderful! The.... viscosity? Thicker than hot fudge, but squishy, not firm. It kinda sorta stays cut. I'm sure I did something wrong, but can't figure it out. Give it a try yourself, though. I'm sure that my problem was user error somewhere. :) December 14, 2005
