Scallops in Double Pepper Sauce

INGREDIENTS

1/4 c Olive Oil
5 Chopped Garlic Cloves
1 lb Bay Or Sea Scallops
3/4 c Slivered Red Peppers
3/4 c Slivered Green Peppers
1/2 c Chopped Onion
1/2 ts Tabasco Pepper Sauce
1/4 ts Salt
2 tb Drained Capers

INSTRUCTIONS

In a large skillet, heat the oil and add the garlic. Cook until golden, about 1 minute. Add the scallops, peppers, onion, Tabasco sauce and salt. Stirring constantly, cook for 5 minutes, or until the scallops turn white and the vegetables are crisp-tender. Stir in the capers and serve immediately.

CHEF COMMENTS

Slivers of red and green bell peppers give this quickly prepared dish vibrant color, and the garlic, Tabasco sauce and capers provide lots of flavor.

Made this recipe last night. It was quick to make but it was missing the flavor that I thought it should have. Next time I make it I will play with some herbs in it. February 11, 2007
