Bill's Blueberry Cobbler

SERVINGS

4 to 6 servings scale / convert

INGREDIENTS

6 tbsp. unsalted butter
1 cup all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg, freshly grated
1 cup sugar
2/3 cups milk
2 cups blueberries

INSTRUCTIONS

Preheat oven to 375°F. In an 8x8-inch square or other 2-qt baking dish melt butter. In a bowl, sift together flour, baking powder, salt, nutmeg, and add sugar until mixed well. Add milk and whisk batter until just combined. Pour batter onto melted butter; do not stir. Pour blueberries into center of batter; do not stir. Bake 40 minutes, or until cake portion is golden and berries exude juices.

Serve warm or at room temperature with whipped cream or vanilla ice cream.

This was a very easy to follow recipe, it's pretty fool-proof.
My entire family is filled with great chefs. They are always making new and innovative dishes to bring to Thanksgiving and other holidays.
After tasting this cobbler, I was ASKED to bring it in to Thanksgiving and every other occasion. It's a great dish! August 18, 2004
