Waldorf Red Cake

INGREDIENTS

1/2 cup butter
1-1/2 cups sugar
1 tsp. vanilla
2 tbsp. cocoa
2-1/4 cups sifted cake flour
2 eggs
2 oz. red food coloring
1/4 tsp. salt
1 cup buttermilk
1 tbsp. vinegar
1 tsp. baking soda

Icing:
1 cup butter
1 cup sugar
5 tbsp. flour
1 cup milk
1 tsp. vanilla

INSTRUCTIONS

Cream shortening and sugar, add eggs, then beat well. Make a paste of food coloring and cocoa and add to mixture. Add salt and buttermilk alternating with flour. Add vanilla. Dissolve soda in vinegar and add last. Blend all ingredients as little as possible. Bake in 2 8-inch cake pans at 350°F for 35-40 minutes or until toothpick inserted in middle come out clean.

Icing:
Cream butter and sugar. Cook flour in milk until very thick, Stirring frequently to avoid lumps. Allow mixture to cool, then combine with butter and sugar mixture. Add vanilla and beat until creamy.
