Sweet Red Pepper Soup

INGREDIENTS

4 large red bell peppers, chopped
1/2 cup onion, chopped
1/4 cup apple, peeled and chopped
1/4 cup carrot, peeled and chopped
1 Tablespoon vegetable oil
4 cups chicken stock or vegetable oil

INSTRUCTIONS

Saute peppers, onions, apples, carrots, and vegetable oil, stirring frequently, for 5 to 7 minutes, until onions are translucent but now browned. Then add the stock. Bring to a boil over high heat. Reduce heat and simmer, partially covered, for 25 minutes. Puree soup in a blender or food processor fitted with a steel blade. Return soup to the saucepan.

I loved, absolutely loved this recipe! It was very easy to do, to follow and tasted amazing. I was very surprised by the turn out too because there aren't really any spices to add but it is LOADED with flavor. July 26, 2004

Mmmm... suprisingly good! I was worried when I looked at the ingredients that it wasn't going to be anything special, but I was pleasantly surprised. My guest thoroughly enjoyed it, and gave it 4-stars. It kind of reminded me of a sweet tomato soup, as it ended up having that same color and consistency. Enjoy! March 28, 2000
