Definition

Humboldt Fog is a soft, surface ripened, hand-crafted goat milk cheese. The texture is creamy with a subtle tangy flavor. Each 5 lb wheel features a ribbon of edible vegetable ash along its center and a coating of ash under its exterior that gives the cheese a cake-like appearance. Winner of American Cheese Society competition 1998-2002 & 2005.
