Definition

A soup of Spanish origin, whose name is derived from the Arabic equivalent of "soaked bread". The dish is prepared with bread and vegetables such as tomatoes, cucumbers, onions and bell peppers, and is topped with olive oil and vinegar. It is nearly always served ice cold. It was originally prepared and served in clay bowls, which added to the flavor of the gazpacho.
