paella

Originating in the Valencia region of Spain, paella is a rice dish named after the paellera, which is the pan in which the dish is prepared. The basic ingredients of the dish are rice, olive oil and saffron, to which meats and seafood, such as chicken, chorizo, mussels, prawns and squid, may be added. Paella provided the inspiration for the New Orleans dish jambalaya.
