Cucumbers are the fruit of a climbing annual that has been cultivated in India for over 3,000 years. They are now available around the globe, and are popularly used in the cuisine of Eastern European countries.
The deep green and bumpy skin of the fruit is edible, and the insides are a pale yellow and sea green with numerous seeds. Cucumbers are generally eaten raw, but can also be cooked and au gratin or sautéed in butter.
Gherkins, which are a variety of cucumbers picked when unripe, are used to make pickles.
