Cheddar

Cheddar is the world's most popular cheese with it's origins in England. The name comes from the process of scalding the cow's milk curd twice, followed by milling or "cheddaring" the curd: cutting and piling the curd in order to remove the whey and break down the curd. True farmhouse English cheddar is found in large cylindrical shapes and has a very full, complex flavor profile, as well as a creamy color. American cheddar can either be found stark white (as in Vermont cheddar), or typically orange (colored with anatto seed or other colorings).
