Manchego

Spain's most famous cheese, manchego can be found "fresco" (aged for 2 months), "curado" (aged one year), and "aƱejo" or "viejo" (aged two years). It is made form sheep's milk and is a simple, nutty cheese with tiny holes. Wheels of Manchego have a characteristic crosshatch pattern on their rind, and the cheese is almost always served in wafer-thin triangles fanned out on a serving plate.
