Definition

A cow's milk cheese from the Trentino-Alto Adige region of Italy, just south of the Alps. The flavor is pronounced, resembling Parmegiano-Reggiano except with a creamy texture. Also of note are the small holes like crab tunnels in the sand running through the flesh of the cheese.
