Also known as French beans or string beans, these beans have long, thin pods that are picked while young before becoming tough and stringy. The pod and seeds are edible, and are prepared by snipping the top and bottom of the bean, and can also be sliced vertically down the middle of the bean, called French-cutting. They can then be steamed, pan-seared or baked in a casserole. Green beans are popular as a side dish and are commonly placed on the Thanksgiving dinner table in the form of a green bean casserole.
