Definition
The annatto is a tree that originated from Latin America, but annatto (also known as achiote) refers to the Indian red-colored dye made from the ground pulp found around the seeds of this tree. The paste imparts a light musk flavor, but is used more as a dye than a spice. It is used to color oil, butter and cheese.
